  • 1 tablespoon Tomato Paste
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder add to taste
  • 1 teaspoon Coriander
For Assembly
  • 8 pieces Corn Tortillas, 6-inch
  • 2 tablespoons Vegetable Oil for brushing
  • 1 cup Pepper Jack Cheese, shredded
  • 1 cup Monterey Jack Cheese, shredded
For Toppings
  • 1 cup Shredded Iceberg Lettuce
  • Customizable Extras sliced black olives, pickled jalapeños, avocado, sour cream, lime juice, cilantro

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C).
  2. Shred the rotisserie chicken and mix with salsa, water, tomato paste, cumin, chili powder, and coriander.
  3. Brush both sides of corn tortillas with vegetable oil and lay them on a baking sheet.
  4. Sprinkle pepper jack cheese on tortillas, add chicken filling, then top with more cheese.
  5. Bake for 10-12 minutes until golden brown and cheese is bubbling.
  6. Sprinkle shredded iceberg lettuce over the hot tacos.
  7. Fold tortillas, top with Monterey Jack cheese, and return to the oven for 3-5 minutes.
  8. Serve immediately with customizable toppings.
