Ingredients
  

For the Salad
  • 1 head Romaine Lettuce Freshly washed and dried
  • 1 cup Croutons Store-bought or homemade
  • 1/2 cup Parmesan Cheese Shaved
  • 1 pound Chicken Tenders Skinless for a lighter option
For the Dressing
  • 1/2 cup Mayo Can substitute with Greek yogurt
  • 1/2 cup Plain Yogurt
  • 2 cloves Garlic Freshly grated
  • 1/2 teaspoon Black Pepper Freshly ground
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1/2 teaspoon Salt Adjust to taste
  • 1/4 cup Olive Oil Can substitute with avocado oil
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Worcestershire Sauce
For the Chicken Crust
  • 1 large Egg
  • 1/2 cup Flour
  • 1/2 cup Breadcrumbs
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Salt

Method
 

Prepare the Dressing
  1. Whisk together mayo, plain yogurt, garlic, lemon juice, Dijon mustard, Worcestershire sauce, Parmesan, olive oil, salt, and black pepper in a bowl until smooth and creamy.
  2. Cover and refrigerate the dressing for at least 30 minutes.
Prep Chicken
  1. Clean chicken tenders under cold water and dry with paper towels.
  2. In one bowl, whisk together egg, minced garlic, lemon juice, salt, and black pepper.
  3. In another bowl, mix flour, breadcrumbs, paprika, garlic powder, and onion powder.
Coat Chicken
  1. Dip each chicken tender into egg mixture, then coat with breadcrumb mixture.
  2. Arrange on a non-stick baking sheet.
Bake Chicken
  1. Preheat oven to 400°F (204°C). Spray chicken with avocado oil.
  2. Bake for 10 minutes, flip, spray again, then bake for another 10 minutes.
Assemble Salad
  1. Combine romaine lettuce with half of the dressing in a large bowl.
  2. Transfer to a serving platter, lay baked chicken on top, and add croutons and remaining dressing.
  3. Sprinkle shaved Parmesan to finish.
