  1. Start by grating 2 medium zucchinis, place them on paper towels, sprinkle with salt, and squeeze out excess moisture. Let sit for about 10 minutes.
  2. Melt 2 tablespoons of butter in a skillet over medium heat. Add chopped onion, corn, and minced garlic. Sauté for 3-5 minutes until onions are translucent and corn is tender.
  3. In a separate bowl, whisk together ½ cup flour, ¼ cup cornmeal, 2 tablespoons cornstarch, and salt and pepper to taste.
  4. Incorporate the zucchini and sautéed mixture into dry ingredients, adding 1 cup cheese, 1 egg, and ¼ cup milk. Mix until just combined.
  5. Heat ¼ inch of oil in the skillet over medium-high heat. Spoon in batter to fry 3-4 fritters at a time for 3-4 minutes per side until golden brown.
