- Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
- In a large mixing bowl, combine the grated zucchini, eggs, almond flour, shredded mozzarella, baking powder, salt, and garlic powder. Stir well to form a cohesive dough.
- Take portions of dough and roll them into balls, creating a hole in the center to form traditional bagel shapes. Place each on the baking sheet.
- Sprinkle the tops of the uncooked bagels with everything bagel seasoning or desired toppings.
- Bake the bagels for 20-25 minutes, until golden brown and firm to the touch.
