Method
 

Preparation Instructions
  1. In a large bowl, whisk together lemon juice, olive oil, garlic, oregano, paprika, salt, and pepper until well combined.
  2. Add the chicken breasts to the marinade and coat thoroughly. Cover and marinate for at least 20 minutes.
  3. Preheat oven to 400°F (200°C). Wash and cube potatoes, toss with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet.
  4. Roast potatoes for about 30 minutes, stirring halfway through until golden and crispy.
  5. Heat a skillet and cook the marinated chicken for 7-8 minutes on each side until golden brown and cooked through.
  6. In the same skillet, sauté the zucchini that has been tossed in the reserved marinade for 5-7 minutes until softened.
  7. Assemble meal prep containers with chicken, roasted potatoes, and sautéed zucchini. Store for the week!
