  • 8 oz Rotini Pasta Can substitute with penne or bowtie.
  • 1 can Black Beans Drained and rinsed.
  • 1 cup Corn Canned or thawed frozen.
  • 2 cups Fresh Spinach Optional.
  • 1/4 cup Fresh Cilantro Can substitute with parsley or omit.
For the Creamy Lime Dressing
  • 1 cup Plain Greek Yogurt Can substitute with sour cream.
  • 1/4 cup Extra Virgin Olive Oil Can replace with neutral oil.
  • 2 cloves Minced Garlic Use fresh or garlic powder.
  • 1 tsp Cumin Optional.
  • 1 tsp Smoked Paprika Regular paprika is a substitute.
  • 1 tsp Sugar Optional.
  • 1/2 tsp Salt Adjust to taste.
  • 2 juices Limes Fresh juice preferred.
  • 1/4 cup Mayonnaise Optional.

Method
 

Cooking Instructions
  1. Boil and cook the pasta in salted water until al dente, about 8-10 minutes. Drain and rinse under cool water.
  2. Prepare the dressing by whisking together Greek yogurt, olive oil, garlic, cumin, smoked paprika, sugar, salt, and fresh lime juice until smooth.
  3. Combine the cooled rotini with black beans, corn, spinach, and cilantro in the dressing bowl, gently mixing until coated.
  4. Taste and adjust seasoning if necessary, adding more salt or lime juice to enhance flavor.
  5. Serve immediately or chill in the fridge for at least 30 minutes for enhanced flavors.

Notes
