Method
 

Preparation
  1. Gather all the ingredients and measure them for quick assembly.
  2. In a mixing bowl, combine granulated sugar, sesame seeds, garlic, green onion, soy sauce, rice vinegar, chili oil, and sesame oil. Whisk until the sugar dissolves.
  3. Cut off the ends of the cucumbers, then cut diagonally about 1/4 inch apart to create spirals.
  4. Salt the cucumber spirals and let them sit for 8-10 minutes.
  5. Rinse the cucumbers under cold water, drain well, and pat dry with paper towels.
  6. Toss the dried cucumber spirals with the prepared dressing. Allow it to sit for a few minutes before serving.
