  • 2 Onions Yellow onions are preferred.
  • 3 cloves Garlic Minced, use fresh.
  • 8 ounces Wild Mushrooms Can substitute with button or cremini mushrooms.
  • 4 cups Vegetable Broth Homemade or store-bought.
  • 4 cups Kale Chopped, can substitute with spinach.
  • to taste Salt
  • to taste Pepper
Optional Add-Ins
  • 1 cup Carrots Chopped.
  • 1 teaspoon Red Pepper Flakes For a spicy kick.
  • 1 cup Lentils or Beans For added protein and fiber.

Method
 

Step-by-Step Instructions
  1. In a large pot, pour in the olive oil and place it over medium heat. Allow the oil to warm for about 1-2 minutes until shimmering.
  2. Add the sliced yellow onions to the pot and cook them for 10 to 15 minutes, stirring occasionally until deep golden brown.
  3. Stir in the minced garlic and wild mushrooms, and cook for an additional 5 minutes until mushrooms are tender.
  4. Pour in the vegetable broth and stir. Bring to a rolling boil, then reduce the heat to low and cover, letting it simmer for 15 to 20 minutes.
  5. In the last 5 minutes, add the chopped kale and season with salt and pepper to taste, stirring gently.
  6. Serve hot in warm bowls and enjoy, optionally alongside crusty bread or a light salad.
