- Preheat your oven to 350°F (175°C) and prepare an 8x8 inch baking dish with non-stick spray or parchment paper.
- In a large bowl, combine coconut oil, flour, quick oats, maple syrup, coconut sugar, baking powder, and salt until crumbly.
- Press two-thirds of the mixture into the bottom of the prepared baking dish to form a solid layer.
- Spread raspberry preserves over the pressed oat mixture, leaving a small margin around the edges.
- Crumble the remaining oat mixture over the raspberry layer and gently press it down.
- Bake for 25 to 30 minutes until lightly golden brown.
- Allow the bars to cool in the pan for 10-15 minutes before cutting into squares.
