- Prepare the Raspberry Syrup: In a medium saucepan, combine raspberries and water, simmer for 10 minutes, strain to extract juice, return juice to pan, add sugar and lemon juice, simmer for 5 minutes, and chill.
- Whip the Cream: Beat heavy cream until stiff peaks form, about 3-5 minutes, and set aside.
- Make the Filling: Combine mascarpone cheese, granulated sugar, raspberry syrup, and vanilla extract, mix until smooth, then fold in whipped cream.
- Assemble the Layers: Dip ladyfingers in remaining raspberry syrup for 1-2 seconds, arrange in dish, spread half mascarpone filling, and grate half of the white chocolate on top.
- Repeat & Finish: Layer remaining ladyfingers dipped in syrup, top with remaining mascarpone filling, and grate remaining chocolate over the filling.
- Chill: Cover tiramisu and refrigerate for at least 6 hours, preferably overnight.
