Method
 

Preparation Steps
  1. Cut approximately 4 cups of seedless watermelon into 1-inch cubes, and 2 cups of cucumber into thin slices.
  2. Chop about a quarter cup of mint leaves if using, and set the ingredients aside.
  3. In a large mixing bowl, gently toss watermelon, cucumber, and crumbled feta together.
  4. If making the dressing, drizzle olive oil and lemon juice over the salad and gently fold to combine.
  5. Cover the bowl and refrigerate for about 30 minutes to allow flavors to meld.
  6. Gently stir the salad, transfer to serving bowl, and garnish with additional mint leaves before serving.
