- Cut approximately 4 cups of seedless watermelon into 1-inch cubes, and 2 cups of cucumber into thin slices.
- Chop about a quarter cup of mint leaves if using, and set the ingredients aside.
- In a large mixing bowl, gently toss watermelon, cucumber, and crumbled feta together.
- If making the dressing, drizzle olive oil and lemon juice over the salad and gently fold to combine.
- Cover the bowl and refrigerate for about 30 minutes to allow flavors to meld.
- Gently stir the salad, transfer to serving bowl, and garnish with additional mint leaves before serving.
