- Preheat your oven to 400°F (200°C) and lightly grease an 8x8-inch baking dish.
- In a large mixing bowl, combine cooked sushi rice with rice vinegar, sugar, and salt. Press the rice mixture firmly into the bottom of the greased baking dish.
- Flake the skinless salmon fillet in another bowl and add mayonnaise, Sriracha, soy sauce, and sesame oil. Mix until creamy.
- Spread the salmon mixture evenly over the rice layer in the baking dish and top with shredded mozzarella cheese.
- Bake for 18-20 minutes until the cheese is melted and bubbly. Let it cool for 5 minutes before serving.
- Garnish with chopped green onions and sesame seeds, serve with roasted seaweed squares.
