  • 2 tablespoons Green Onions Chives can be substituted.
  • 1 tablespoon Toasted Sesame Seeds Other nuts or seeds can be used.
For Serving
  • 1 sheet Roasted Seaweed (Nori) Can be omitted if not available.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease an 8x8-inch baking dish.
  2. In a large mixing bowl, combine cooked sushi rice with rice vinegar, sugar, and salt. Press the rice mixture firmly into the bottom of the greased baking dish.
  3. Flake the skinless salmon fillet in another bowl and add mayonnaise, Sriracha, soy sauce, and sesame oil. Mix until creamy.
  4. Spread the salmon mixture evenly over the rice layer in the baking dish and top with shredded mozzarella cheese.
  5. Bake for 18-20 minutes until the cheese is melted and bubbly. Let it cool for 5 minutes before serving.
  6. Garnish with chopped green onions and sesame seeds, serve with roasted seaweed squares.
