  • 1 packet active dry yeast approx. 2.25 tsp
  • 1/2 cup pumpkin puree
  • 1/3 cup brown sugar packed
  • 3 cups bread flour
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1.25 tsp coarse kosher sea salt
  • 1 tbsp baking soda
  • 1 no egg white
  • 1 tbsp water
For the Cream Cheese Spread
  • 6 oz cream cheese softened
  • 1 tbsp honey
  • 1/4 tsp vanilla extract
  • 1/4 tsp cinnamon
  • pinch coarse kosher sea salt
  • 2 tbsp chopped pecans toasted

Step-by-Step Instructions
  1. Proof the yeast by combining warm water, yeast, and a pinch of brown sugar. Let stand until frothy, about 5-10 minutes.
  2. Mix wet ingredients: Blend pumpkin puree and brown sugar in a stand mixer. Add the yeast mixture once frothy.
  3. Prepare dry ingredients: Whisk bread flour, cinnamon, pumpkin pie spice, and salt in a separate bowl.
  4. Form dough: Gradually add dry ingredients to wet mixture, mixing until a sticky dough forms. Knead until smooth.
  5. First rise: Transfer dough to a greased bowl, cover, and let rise until doubled, about 1-2 hours.
  6. Shape bagels: Punch down dough, divide into 8 pieces, and shape each into a bagel.
  7. Chill: Place shaped bagels on a baking sheet, cover, and refrigerate for at least 8 hours.
  8. Boil & bake: Preheat oven to 450°F, boil bagels in water with baking soda for 45 seconds per side, and bake.
  9. Prepare cream cheese spread: Beat cream cheese, honey, vanilla, cinnamon, and salt until smooth. Add pecans.
