  • 1 Red Bell Pepper diced
  • 1 Cucumber diced
  • 1 Shredded Carrots pre-packaged options are fine
  • 1 Red Cabbage shredded
  • 3 Green Onions sliced
  • 1/2 cup Fresh Cilantro chopped
  • 1/2 cup Peanuts
For the Dressing
  • 1/4 cup Soy Sauce or tamari for gluten-free
  • 1 Lime Juice freshly squeezed
  • 1 tablespoon Honey or Maple Syrup maple syrup keeps it vegan
  • 1 tablespoon Sesame Oil
  • 1 teaspoon Fresh Ginger minced
  • 1 clove Garlic minced
  • 1/4 teaspoon Red Pepper Flakes optional

Method
 

Preparation Steps
  1. In a large bowl, combine drained chickpeas, diced red bell pepper, cucumber, shredded carrots, red cabbage, green onions, fresh cilantro, and peanuts. Toss to mix.
  2. In a small bowl, whisk together soy sauce, lime juice, honey or maple syrup, sesame oil, minced ginger, and garlic until smooth.
  3. Pour the dressing over the salad mixture and toss gently until everything is coated.
  4. Let the salad rest for 5 minutes at room temperature.
  5. Serve immediately or refrigerate for up to an hour before serving.
