For the Rice Pilaf
  • 1 cup Basmati Rice can substitute jasmine rice
  • 2 cups Chicken Broth or vegetable broth for vegetarian
For the Salad
  • 1 cup Cucumber diced
  • 1 cup Tomatoes diced
  • 1/4 cup Fresh Mint or Parsley chopped
For Serving
  • 4 pieces Naan or Pita Bread
  • 1 cup Hummus can substitute tzatziki

Method
 

Step-by-Step Instructions
  1. Cube chicken breasts into 1-inch pieces and mix marinade ingredients in a bowl. Add chicken and marinate for at least 1 hour.
  2. Preheat grill to medium-high heat. Thread marinated chicken onto skewers.
  3. Grill chicken skewers for 5-7 minutes on each side until cooked through.
  4. Heat olive oil in a Dutch oven, sauté onions, add rice, then chicken broth. Cook covered for 15 minutes.
  5. Combine cucumber, tomatoes, olive oil, salt, and herbs in a bowl to make salad.
  6. Assemble bowls with rice, chicken skewers, salad, and hummus. Serve with naan or pita.
