Ingredients
  

Tzatziki Base
  • 1 cup Greek Yogurt or plain dairy-free yogurt
  • 1 cup Shredded Cucumber squeeze out excess water
  • 2 tablespoons Lemon Juice fresh lemon preferred
  • 1 tablespoon Dill can substitute with parsley or mint
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • to taste Salt & Pepper adjust to your preference
Salad Ingredients
  • 2 cups Shredded Chicken rotisserie chicken works well
  • 1/4 cup Red Onion finely chopped, optional
  • 1/2 cup Kalamata Olives or green olives as substitute
  • 1/2 cup Feta Cheese or dairy-free feta for vegan
  • 1/4 cup Fresh Parsley for garnish, optional

Method
 

Preparation
  1. In a large mixing bowl, combine Greek yogurt, shredded cucumber, and lemon juice. Stir in dill, garlic powder, salt, and pepper until smooth.
  2. Add shredded chicken, red onion, olives, feta cheese, and parsley to the tzatziki base. Mix gently until evenly combined.
  3. Taste the mixture and adjust the seasoning with more lemon juice, salt, or pepper to your liking.
  4. Cover the bowl with plastic wrap or transfer to an airtight container and chill in the refrigerator for at least 30 minutes.
  5. Before serving, remove from the refrigerator, transfer to a serving bowl, and garnish with additional feta, dill, or olive oil.
