  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon brown sugar or honey/agave
  • 1 teaspoon cornstarch dissolved in 2 teaspoons water

Step-by-Step Instructions
  1. Heat a large skillet or wok over medium-high heat. Add sesame oil once hot.
  2. Stir-fry diced ham, carrots, and peas for 2-3 minutes until softened.
  3. Push mixture to one side, pour in eggs, cook until firm, then mix everything.
  4. Add cooked rice and pineapple, drizzle with soy sauce, stir-fry 5-7 minutes.
  5. In a saucepan, combine pineapple juice, ketchup, rice vinegar, and brown sugar, simmer.
  6. Thicken sauce with cornstarch mixture, cook until glossy.
  7. Serve topped with sauce and green onions, enjoy!
