Preparation Steps
- Preheat your oven to 425°F (220°C).
- Slice the zucchinis lengthwise into 1/8 inch ribbons.
- Lay the zucchini ribbons on a baking tray and sprinkle with salt. Let sit for 5 minutes to remove moisture.
- Combine ricotta, ½ cup Parmigiano Reggiano, basil, garlic, egg, salt, and pepper in a large bowl. Mix until creamy.
- Spread marinara sauce on the bottom of a baking dish. Roll zucchini slices with filling and place seam-side down in dish.
- Cover rollatini with more marinara sauce and sprinkle with mozzarella and remaining Parmigiano Reggiano.
- Bake for 25-30 minutes until cheese is melted and bubbly.
- Let cool for a few minutes before serving warm.
