For the Zucchini
  • 4 medium Zucchini sliced into ribbons
For the Marinara
  • 2 cups Marinara Sauce high-quality, like Rao's
For the Filling
  • 1 cup Ricotta Cheese well-drained
  • 0.5 cup Parmigiano Reggiano freshly grated
  • 1 cup Mozzarella Cheese shredded or sliced
  • 1 large Egg to bind the filling
  • 0.25 cup Fresh Basil chopped
  • 0.25 cup Fresh Parsley chopped
  • 3 cloves Garlic minced
  • to taste Salt for seasoning
  • to taste Pepper for seasoning

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchinis lengthwise into 1/8 inch ribbons.
  3. Lay the zucchini ribbons on a baking tray and sprinkle with salt. Let sit for 5 minutes to remove moisture.
  4. Combine ricotta, ½ cup Parmigiano Reggiano, basil, garlic, egg, salt, and pepper in a large bowl. Mix until creamy.
  5. Spread marinara sauce on the bottom of a baking dish. Roll zucchini slices with filling and place seam-side down in dish.
  6. Cover rollatini with more marinara sauce and sprinkle with mozzarella and remaining Parmigiano Reggiano.
  7. Bake for 25-30 minutes until cheese is melted and bubbly.
  8. Let cool for a few minutes before serving warm.
