  • ½ cup creamy peanut butter smooth variety recommended
  • 2 tablespoons water for adjusting consistency
  • 3 tablespoons soy sauce tamari or coconut aminos for gluten-free option
  • 1 juice of lime fresh lime juice is best
  • 2 tablespoons honey maple syrup can replace for vegan
  • 1 tablespoon toasted sesame oil pure sesame oil
  • 1 tablespoon grated fresh ginger frozen ginger is an option
  • ½ teaspoon garlic powder fresh garlic is a delicious alternative

Step-by-Step Instructions
  1. In a medium bowl, whisk together peanut butter, water, soy sauce, lime juice, honey, sesame oil, ginger, and garlic powder until smooth.
  2. In a large mixing bowl, combine coleslaw mix, shredded chicken, scallions, red bell pepper, and peanuts. Add optional herbs if desired.
  3. Drizzle the dressing over the salad mixture and gently toss to combine.
