Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the ground beef and chopped onion. Cook for about 5-7 minutes until browned.
  3. Stir in black beans, diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and pepper. Simmer on low heat for 5 minutes.
  4. In a mixing bowl, combine cornmeal, milk, and egg. Whisk until smooth.
  5. Grease a 9x13-inch baking dish. Spread half of the cornmeal mixture at the bottom, layer with the beef filling, and top with the remaining cornmeal.
  6. Sprinkle shredded cheddar cheese and optional sliced black olives on top.
  7. Bake for 30-35 minutes until the top is golden brown and cheese is bubbling.
  8. Cool for 10 minutes before slicing. Garnish with chopped cilantro before serving.
