Ingredients
  

For the Casserole
  • 32 ounces Frozen Tater Tots
  • 1 pound Breakfast Sausage mild or spicy
  • 2 cups Shredded Cheddar Cheese or Monterey Jack or Asiago
  • 6 large Large Eggs well whisked
  • 1 cup Milk (for egg mixture) or half-and-half
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Onion Powder or fresh shallots
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoons Olive Oil or butter
For the Sausage Gravy
  • 1/4 cup All-Purpose Flour or cornstarch for gluten-free
  • 2 cups Milk (for gravy) or broth for a lighter sauce
  • 1 teaspoon Paprika omit for a milder dish
  • 2 tablespoons Fresh Parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients.
  2. In a large skillet, drizzle olive oil and add breakfast sausage. Sauté for 5-7 minutes until browned.
  3. In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and black pepper until smooth.
  4. Grease a 9x13 inch baking dish. Layer half of the frozen tater tots at the bottom.
  5. Pour the egg mixture over the tater tots. Sprinkle cooked sausage and shredded cheese on top.
  6. Top with the remaining tater tots, pressing down lightly.
  7. In a saucepan, melt butter and whisk in flour to create a roux. Gradually add milk while stirring and cook until thick.
  8. Pour the gravy over the casserole evenly.
  9. Bake for 40-45 minutes until tater tots are golden-brown and egg is set.
  10. Allow to cool for 10 minutes, then garnish with fresh parsley before serving.
