Preparation
- Preheat your oven to 375°F (190°C). Gather all your ingredients.
- In a large skillet, drizzle olive oil and add breakfast sausage. Sauté for 5-7 minutes until browned.
- In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and black pepper until smooth.
- Grease a 9x13 inch baking dish. Layer half of the frozen tater tots at the bottom.
- Pour the egg mixture over the tater tots. Sprinkle cooked sausage and shredded cheese on top.
- Top with the remaining tater tots, pressing down lightly.
- In a saucepan, melt butter and whisk in flour to create a roux. Gradually add milk while stirring and cook until thick.
- Pour the gravy over the casserole evenly.
- Bake for 40-45 minutes until tater tots are golden-brown and egg is set.
- Allow to cool for 10 minutes, then garnish with fresh parsley before serving.
