Step-by-Step Instructions
- Rinse rice under cold water until clear. Combine rinsed rice, 2 cups of water, and a pinch of salt in a medium saucepan. Boil, cover, and simmer for 15-20 minutes.
- Heat olive oil in a large skillet. Add ground beef or turkey, breaking it apart. Cook for 5-7 minutes until browned and cooked through. Drain excess fat.
- Sprinkle taco seasoning and pour in 1/4 cup of water. Stir and cook for another 2-3 minutes until the sauce thickens.
- Add rinsed black beans, corn, and salsa to the skillet. Stir and heat through for about 3-5 minutes until the mixture thickens.
- Fluff cooked rice and divide between serving bowls. Top with the meat and veggie mixture, then layer with cheese, tomatoes, avocado, green onions, and cilantro.
- Season with salt and pepper to taste. Serve immediately with optional toppings like jalapeños, lime wedges, and sour cream.
