  • 2 tablespoons taco seasoning check for vegetarian options
  • 1 tablespoon olive oil
For the Veggies
  • 1 can black beans rinsed
  • 1 cup corn canned or frozen
  • 1/2 cup salsa
  • 1 cup cherry tomatoes halved
  • 1 avocado can substitute with guacamole
  • 2 green onions sliced
  • 1/4 cup cilantro chopped
For Toppings
  • 1/2 cup shredded cheddar cheese or vegan cheese for dairy-free
  • 1 cup salsa optional
  • sliced jalapeños optional
  • lime wedges optional
  • sour cream optional

Method
 

Step-by-Step Instructions
  1. Rinse rice under cold water until clear. Combine rinsed rice, 2 cups of water, and a pinch of salt in a medium saucepan. Boil, cover, and simmer for 15-20 minutes.
  2. Heat olive oil in a large skillet. Add ground beef or turkey, breaking it apart. Cook for 5-7 minutes until browned and cooked through. Drain excess fat.
  3. Sprinkle taco seasoning and pour in 1/4 cup of water. Stir and cook for another 2-3 minutes until the sauce thickens.
  4. Add rinsed black beans, corn, and salsa to the skillet. Stir and heat through for about 3-5 minutes until the mixture thickens.
  5. Fluff cooked rice and divide between serving bowls. Top with the meat and veggie mixture, then layer with cheese, tomatoes, avocado, green onions, and cilantro.
  6. Season with salt and pepper to taste. Serve immediately with optional toppings like jalapeños, lime wedges, and sour cream.
