Ingredients
  

For the Salad
  • 12 oz Rotini Use Barilla for optimal texture
  • 1 lb Ground Beef Choose 80/20 or 85/15 fat content
  • 1 packet Taco Seasoning McCormick is recommended
  • 1.5 cups Tomatoes Diced into 1/2-inch pieces
  • 1.5 cups Bell Pepper Chopped into bite-sized chunks
  • 3 cups Shredded Cheese Your favorite blend
  • 4 cups Lettuce Finely shredded
  • 1/4 cup Red Onion Finely diced
For the Dressing
  • 15 oz French Dressing Add just before serving
  • 2 tbsp Lime Juice Vital for flavor enhancement
For Topping
  • 3 cups Tortilla Chips Lightly crushed into 1-inch fragments
  • Fresh Cilantro Optional garnish

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Cook 12 oz of rotini until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Dice 1.5 cups of tomatoes and 1.5 cups of bell pepper. Finely shred 4 cups of lettuce and dice 1/4 cup of red onion. Set aside.
  3. In a large skillet, brown 1 lb of ground beef over medium-high heat, breaking it into crumbles until no longer pink, about 6-8 minutes. Drain excess fat.
  4. Sprinkle cooked beef with taco seasoning and 1/4 cup of water. Simmer for 1-2 minutes.
  5. In a large bowl, combine rotini, seasoned beef, tomatoes, bell pepper, shredded cheese, lettuce, and onion. Toss gently.
  6. Drizzle 2 tbsp of lime juice over the salad. Toss gently to distribute.
  7. Pour 15 oz of French dressing over the salad just before serving. Toss gently.
  8. Fold in 3 cups of crushed tortilla chips just before serving.

Notes
