Step-by-Step Instructions
  1. Rinse the shrimp under cold water, pat dry and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat for 1-2 minutes until shimmering.
  3. Add garlic and ginger to the skillet, sauté for 1 minute until fragrant.
  4. Add the seasoned shrimp, cooking for 2-3 minutes until pink and opaque.
  5. Stir in diced fresh pineapple and heat through for 1 minute.
  6. Pour in sweet chili sauce and soy sauce, mixing well and cooking for another 2-3 minutes.
  7. Remove from heat and stir in sliced green onions.
  8. Taste and adjust seasonings as necessary before serving.
  9. Serve hot over jasmine rice or quinoa.
