  • 2 tablespoons Oil Coconut oil for tropical taste
  • 2 cloves Garlic Minced
  • 1 tablespoon Ginger Minced fresh
  • 1 cup Rice Jasmine or basmati is recommended
For the Flavor
  • 1 cup Pineapple Diced fresh, or canned if drained
  • 2 tablespoons Sriracha Adjust to taste
  • 2 tablespoons Coconut Aminos Gluten-free soy sauce alternative
  • 1 tablespoon Sugar Optional if using sweet pineapple
  • 1/2 teaspoon Salt Season to taste
  • 1 pinch Red Chili Flakes Omit for milder version
  • 1 3/4 cups Water For cooking rice

Method
 

Step-by-Step Instructions
  1. In a medium saucepan, heat 2 tablespoons of oil over medium heat. Add 2 cloves of minced garlic and 1 tablespoon of minced fresh ginger and sauté for about 5 minutes.
  2. Add 1 cup of jasmine or basmati rice to the saucepan, stirring to combine. Toast the rice for 2 minutes until slightly golden.
  3. Add 1 cup of diced fresh pineapple, 2 tablespoons of sriracha, 2 tablespoons of coconut aminos, 1 tablespoon of sugar, 1/2 teaspoon of salt, and a pinch of red chili flakes. Sauté for 1 minute.
  4. Pour in 1 3/4 cups of water, stir gently, and bring to a boil. Reduce heat to medium-low, cover, and let it simmer for 15 minutes.
  5. After 15 minutes, turn off the heat and keep covered for an additional 5 minutes. Fluff the rice with a fork and serve hot.

Notes
