- In a medium saucepan, heat 2 tablespoons of oil over medium heat. Add 2 cloves of minced garlic and 1 tablespoon of minced fresh ginger and sauté for about 5 minutes.
- Add 1 cup of jasmine or basmati rice to the saucepan, stirring to combine. Toast the rice for 2 minutes until slightly golden.
- Add 1 cup of diced fresh pineapple, 2 tablespoons of sriracha, 2 tablespoons of coconut aminos, 1 tablespoon of sugar, 1/2 teaspoon of salt, and a pinch of red chili flakes. Sauté for 1 minute.
- Pour in 1 3/4 cups of water, stir gently, and bring to a boil. Reduce heat to medium-low, cover, and let it simmer for 15 minutes.
- After 15 minutes, turn off the heat and keep covered for an additional 5 minutes. Fluff the rice with a fork and serve hot.
