Ingredients

  • 4 lbs Chicken Thighs Skin-on, bone-in thighs ensure moisture and flavor; trim excess skin for a better texture.
For the Glaze
  • 1/2 cup Soy Sauce Use low sodium for a healthier option.
  • 2 tbsp Dijon Mustard Yellow mustard is a suitable substitute.
  • 3/4 cup Apricot Preserves Peach or orange marmalade can be used for a twist.
  • 1 tbsp Dehydrated Onion Fresh onion works well but be sure to sauté it first.
  • 1 tsp Kosher Salt Reduce the amount if you're using regular soy sauce to avoid over-salting.
  • 1 tsp Granulated Garlic Freshly minced garlic will add a fresh kick.
  • 1/2 tsp Crushed Red Pepper Adjust the amount according to your spice preference.

Method
 

Cooking Steps
  1. Preheat your oven to 425°F (220°C) to ensure it's hot enough for caramelization.
  2. Lightly grease a 9x13-inch baking dish with cooking spray or a thin layer of oil.
  3. Combine the soy sauce, Dijon mustard, apricot preserves, dehydrated onion, kosher salt, granulated garlic, and crushed red pepper in a mixing bowl and whisk until smooth.
  4. Coat the chicken thighs generously in the apricot glaze mixture.
  5. Place the glazed chicken thighs skin-side down in the prepared baking dish and bake uncovered for 20 minutes.
  6. After 20 minutes, flip the chicken thighs over and spoon any remaining glaze over the top. Return to the oven and bake for an additional 25-30 minutes.
  7. Use a meat thermometer to check that the chicken has reached an internal temperature of 165°F (74°C).
  8. Let the chicken rest for a few minutes before serving.

Notes

Allow the chicken to marinate in the glaze for at least 30 minutes if possible for enhanced flavor. Pat dry before glazing for better caramelization.
