Cooking Steps
- Preheat your oven to 425°F (220°C) to ensure it's hot enough for caramelization.
- Lightly grease a 9x13-inch baking dish with cooking spray or a thin layer of oil.
- Combine the soy sauce, Dijon mustard, apricot preserves, dehydrated onion, kosher salt, granulated garlic, and crushed red pepper in a mixing bowl and whisk until smooth.
- Coat the chicken thighs generously in the apricot glaze mixture.
- Place the glazed chicken thighs skin-side down in the prepared baking dish and bake uncovered for 20 minutes.
- After 20 minutes, flip the chicken thighs over and spoon any remaining glaze over the top. Return to the oven and bake for an additional 25-30 minutes.
- Use a meat thermometer to check that the chicken has reached an internal temperature of 165°F (74°C).
- Let the chicken rest for a few minutes before serving.
