Method
 

Step-by-Step Instructions
  1. Bring 4 cups of water to a rolling boil in a large pot over high heat. Stir in 1 cup of grits and a pinch of salt. Allow it to return to a boil, then reduce heat to medium-low.
  2. Lower the heat and let the grits simmer gently for 20-30 minutes, stirring occasionally until they are creamy and lump-free.
  3. Once creamy, remove from heat and mix in 2 tablespoons of butter and 1 cup of shredded cheddar cheese. Stir until melted and incorporated.
  4. Heat a non-stick skillet over medium heat, add a teaspoon of oil or butter, and fry the 2 eggs for 3-4 minutes until the whites are set and yolks remain runny.
  5. Spoon the creamy grits into bowls, place a fried egg on top, and garnish with chopped green onions, cilantro, and jalapeño slices.
