For the Spice Blend

  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
For the Finish
  • 1/4 cup Fresh Cilantro chopped
  • 2 tablespoons Lime Juice

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine the chicken thighs, coconut milk, olive oil, chopped onion, minced garlic, grated ginger, chili paste, ground cumin, paprika, salt, and black pepper. Mix everything thoroughly until the chicken is well coated. Cover and let it marinate in the refrigerator for at least 1 hour, preferably overnight.
  2. Preheat your oven to 375°F (190°C).
  3. Transfer the marinated chicken and all of the marinade into a greased baking dish. Spread the chicken in a single layer.
  4. Place the baking dish in the preheated oven and bake for 35 to 40 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  5. Remove the baking dish from the oven and let the chicken rest for about 5 minutes. Squeeze fresh lime juice over the top and sprinkle with chopped cilantro before serving.
