Step-by-Step Instructions
  1. In a small bowl, combine 1½ teaspoons of active dried yeast with ¼ cup of warmed milk and 1 teaspoon of sugar. Stir gently and let this mixture sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together 4 eggs, ⅓ cup of sugar, and 2 teaspoons of vanilla extract until combined. Incorporate the yeast mixture, then add remaining milk.
  3. Gradually add 5⅓ cups of flour and ½ cup of softened butter to the wet mixture. Stir until a dough forms, then knead for 5-7 minutes until smooth. Let it rise for 1 hour.
  4. Finely chop 2 cups of ripe peaches, mix with ⅓ cup of brown sugar and half a lemon's juice. Set aside.
  5. Once the dough rises, punch it down and roll out to ¼ inch thickness. Place a scoop of peach filling on half, fold over, and seal edges.
  6. Heat oil in a skillet to 350°F. Fry filled fritters for 2-3 minutes per side until golden brown. Drain on paper towels.
  7. In a bowl, mix 1 cup of powdered sugar, ½ cup of milk, and 1 teaspoon of vanilla bean paste until smooth. Adjust for consistency.
