Preparation Steps
- In your slow cooker, add the fresh strawberries cut into halves, honey, granulated sugar, lemon juice, and a pinch of salt. Stir gently to ensure that all the ingredients are evenly mixed.
- Cover your slow cooker and set it to the low setting, allowing the mixture to cook for 6-7 hours. Stir occasionally to prevent sticking.
- Once cooked, carefully remove the lid and use an immersion blender to puree the thickened mixture until completely smooth.
- Continue to cook the strawberry puree uncovered on low for an additional 1-2 hours to enhance flavors and thicken the mixture.
- Once thickened, stir in pure vanilla extract and allow to cook for a few more minutes to meld flavors.
- Transfer the strawberry butter to a clean, sterilized jar and store in the refrigerator for up to two weeks or freeze for longer storage.
