Preparation Steps
  1. In your slow cooker, add the fresh strawberries cut into halves, honey, granulated sugar, lemon juice, and a pinch of salt. Stir gently to ensure that all the ingredients are evenly mixed.
  2. Cover your slow cooker and set it to the low setting, allowing the mixture to cook for 6-7 hours. Stir occasionally to prevent sticking.
  3. Once cooked, carefully remove the lid and use an immersion blender to puree the thickened mixture until completely smooth.
  4. Continue to cook the strawberry puree uncovered on low for an additional 1-2 hours to enhance flavors and thicken the mixture.
  5. Once thickened, stir in pure vanilla extract and allow to cook for a few more minutes to meld flavors.
  6. Transfer the strawberry butter to a clean, sterilized jar and store in the refrigerator for up to two weeks or freeze for longer storage.
