Step-By-Step Instructions
  1. Grease the inside of your slow cooker with nonstick spray or olive oil.
  2. Place the chicken breasts or thighs in a single layer at the bottom of the slow cooker.
  3. In a mixing bowl, whisk together honey, Dijon mustard, yellow mustard, minced garlic, olive oil, chicken broth, salt, and pepper until smooth.
  4. Pour the sauce over the chicken, ensuring all pieces are well coated.
  5. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken is tender.
  6. If using cornstarch, mix it with water to create a slurry, stir into the sauce, and return to HIGH for an additional 10-15 minutes.
  7. Once cooking is complete, stir the chicken into the sauce and garnish with parsley before serving.
