- Grease the inside of your slow cooker with nonstick spray or olive oil.
- Place the chicken breasts or thighs in a single layer at the bottom of the slow cooker.
- In a mixing bowl, whisk together honey, Dijon mustard, yellow mustard, minced garlic, olive oil, chicken broth, salt, and pepper until smooth.
- Pour the sauce over the chicken, ensuring all pieces are well coated.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken is tender.
- If using cornstarch, mix it with water to create a slurry, stir into the sauce, and return to HIGH for an additional 10-15 minutes.
- Once cooking is complete, stir the chicken into the sauce and garnish with parsley before serving.
