Pie Preparation
- Preheat oven to 375°F (190°C). Roll out spelt crust, fit into a 9-inch pie pan, and prick the bottom.
- Blind bake for 15-20 minutes until lightly golden. Cool while preparing filling.
- In a mixing bowl, combine apple butter, eggs, heavy cream, cinnamon, nutmeg, and sugar. Whisk until smooth.
- Pour filling into the cooled crust. Bake at 350°F (175°C) for 40-45 minutes until edges are set and center wobbles.
- Cool for 30 minutes at room temperature. Refrigerate for a minimum of 6 hours before serving.
- Slice and serve, optionally garnished with whipped cream or decorative crust cutouts.
