Cooking Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering, about 1-2 minutes.
- Carefully add the peeled and deveined shrimp and cook for 2-3 minutes, stirring occasionally until pink and just cooked through.
- Remove the shrimp and set aside. In the same skillet, add ground pork sausage and cook until browned and crumbled, about 5-7 minutes.
- Add diced onion, green bell pepper, and celery; sauté for about 5 minutes until softened.
- Stir in minced garlic, Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper; cook for an additional minute.
- Add 1 cup of long grain white rice, stir, and toast for 1-2 minutes.
- Pour in 2 cups of chicken broth, bring to a boil, cover, and reduce the heat to low. Simmer for 18-20 minutes.
- Fold in the sautéed shrimp and fresh parsley; mix well and heat through for 2 minutes.
- Serve hot, garnished with extra parsley and optional hot sauce.
