Ingredients

  • 1 pound fresh shrimp peeled and deveined

  • 3 cloves garlic minced
For the Rice and Liquids
  • 1 cup long grain white rice can substitute with brown rice
  • 2 cups chicken broth can substitute with vegetable broth
For Seasoning
  • 2 teaspoons Cajun seasoning adjust to taste
  • 1 teaspoon smoked paprika regular paprika can be used
  • ¼ teaspoon cayenne pepper reduce or omit for milder flavor
  • to taste salt essential for flavor balance
  • to taste pepper essential for flavor balance
For Finishing Touches
  • ¼ cup fresh parsley chopped, can substitute with green onions
  • to taste hot sauce optional for extra spice

Method
 

Cooking Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering, about 1-2 minutes.
  2. Carefully add the peeled and deveined shrimp and cook for 2-3 minutes, stirring occasionally until pink and just cooked through.
  3. Remove the shrimp and set aside. In the same skillet, add ground pork sausage and cook until browned and crumbled, about 5-7 minutes.
  4. Add diced onion, green bell pepper, and celery; sauté for about 5 minutes until softened.
  5. Stir in minced garlic, Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper; cook for an additional minute.
  6. Add 1 cup of long grain white rice, stir, and toast for 1-2 minutes.
  7. Pour in 2 cups of chicken broth, bring to a boil, cover, and reduce the heat to low. Simmer for 18-20 minutes.
  8. Fold in the sautéed shrimp and fresh parsley; mix well and heat through for 2 minutes.
  9. Serve hot, garnished with extra parsley and optional hot sauce.
