For the Herby Ranch Dressing

  • 1 packet Ranch Seasoning Mix

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and prepare your sheet pan by lining it with parchment paper or a silicone mat.
  2. In a mixing bowl, toss the chicken breasts with olive oil, salt, pepper, garlic powder, and paprika until well-coated.
  3. Chop the mixed vegetables into bite-sized pieces and add them to the bowl, tossing until evenly coated.
  4. Spread the chicken and vegetables evenly on the prepared sheet pan in a single layer.
  5. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  6. While baking, mix Greek yogurt, ranch seasoning, and chopped herbs in a bowl until well combined.
  7. Warm the pitas in the oven for about 5 minutes, just before the chicken is done.
  8. Serve by stuffing the warm pitas with chicken, roasted vegetables, and drizzles of herby ranch dressing.
