Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground chicken, panko breadcrumbs, red curry paste, minced garlic, grated ginger, fish sauce, soy sauce, beaten egg, chopped cilantro, and lime juice; mix gently.
  3. Roll the mixture into 1-inch meatballs and place them spaced apart on the prepared baking sheet.
  4. Bake the meatballs for 18-20 minutes until golden brown and internal temperature reaches 165°F (74°C).
  5. While baking, whisk together peanut butter, soy sauce, lime juice, honey, red curry paste, and warm water in a small bowl.
  6. Let meatballs cool for a minute, garnish with sliced green onions, and serve with the dipping sauce.
