  • 2 cups sushi rice rinsed until water runs clear
  • 2 cups water use a 1:1 ratio
For the Filling
  • 1 pound cooked chicken breast sliced into thin strips
  • 1/4 cup teriyaki sauce for coating chicken
  • 1 cup cucumber julienned, or bell peppers as substitute
  • 1 medium avocado sliced, optional
For Wrapping
  • 4 sheets nori shiny side facing in
For Garnishing
  • 1 tablespoon sesame seeds optional for topping

Method
 

Preparation Steps
  1. Rinse sushi rice under cold water until water runs clear. Cook rice with equal amount of water in a rice cooker or pot.
  2. Slice cooked chicken breast and coat with teriyaki sauce. Let marinate for 10-15 minutes.
  3. Set up sushi mat; lay nori shiny side down. Spread sushi rice, leaving 1 inch at top edge. Add chicken, cucumber, and avocado.
  4. Roll sushi tightly away from you, sealing edge with water. Cut into 6-8 pieces with a wet knife.
  5. Sprinkle sesame seeds on top and serve with soy sauce and wasabi.
