  • 2 cloves Garlic minced
  • 1 medium Onion chopped
For the Vegetables
  • 4 medium Potatoes russet or Yukon gold, diced
  • 1 medium Green Bell Pepper diced
For the Sauce
  • 1 cup Ketchup or BBQ sauce
  • 2 tbsp Worcestershire Sauce or soy sauce
  • 1 tbsp Brown Sugar or honey
  • 1 tbsp Chili Powder or paprika
  • 1 tbsp Paprika smoked paprika for extra flavor
  • 1 tsp Salt
  • 1 tsp Pepper
For Cooking
  • 2 tbsp Olive Oil or any neutral oil
Optional Toppings
  • 1 cup Shredded Cheese cheddar or mozzarella
  • Fresh Parsley for garnish

Method
 

Step-by-Step Instructions
  1. Wash and dice the potatoes into bite-sized pieces. Set aside in water.
  2. Heat 1 tablespoon of olive oil in a skillet. Cook ground beef for 5-7 minutes until browned. Drain excess fat.
  3. Add the remaining tablespoon of oil, onion, green bell pepper, and garlic. Sauté for 3-4 minutes.
  4. Stir in ketchup, Worcestershire sauce, brown sugar, chili powder, paprika, salt, and pepper. Simmer for 5-7 minutes.
  5. Add drained diced potatoes and ½ cup of water. Cover and cook for 15-20 minutes until potatoes are tender.
  6. Check for tenderness and add extra water if too dry. Top with cheese if desired and cover to melt.
  7. Remove from heat, garnish with parsley, and serve hot.
