  • 12 ounces Sausage Sliced; smoked sausage recommended.
  • 1 pound Shrimp Thawed.
For the Starch & Flavor
  • 1 cup Rice Long-grain white rice preferred.
  • 2 cups Chicken Broth Vegetable broth for vegetarian version.
  • 2 teaspoons Cajun Seasoning
  • 1 teaspoon Smoked Paprika Regular paprika can be used.
For the Finishing Touch
  • 3 stalks Green Onions Sliced; for garnish.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add one chopped onion, one diced bell pepper, and one cup of chopped celery to the skillet. Sauté for about 5 minutes.
  3. Stir in 3 minced garlic cloves and 12 ounces of sliced smoked sausage. Cook for another 4-5 minutes until browned.
  4. Mix in 1 cup of rinsed long-grain white rice and 2 cups of chicken broth. Season with 2 teaspoons of Cajun seasoning and 1 teaspoon of smoked paprika.
  5. Bring to a gentle boil, then cover and reduce heat to low. Allow to simmer for about 15 minutes.
  6. Stir in 1 pound of thawed shrimp and cover. Cook until shrimp turn pink, about 5 minutes.
  7. Taste and adjust seasoning if needed. Garnish with sliced green onions and serve hot.
