Method
 

Instructions

  2. Place the bone-in chicken thighs on the center of the sheet pan, skin side facing up.
  3. Spread your chopped assorted vegetables around the chicken on the sheet pan.
  4. Drizzle olive oil over both the chicken thighs and vegetables, ensuring everything is coated.
  5. Season the chicken and veggies with salt, pepper, minced garlic, and fresh herbs.
  6. Bake in the preheated oven for 35-40 minutes until chicken is golden brown and has an internal temperature of 165°F.
  7. Carefully remove the sheet pan from the oven and let it cool for a few minutes before serving.
