- Start by thoroughly rinsing the whole free-range chicken under cold water, then pat it dry with paper towels. Rub the chicken generously with salt, both inside and out.
- In a bowl, combine dark soy sauce, Shaoxing wine, and grated ginger juice. Rub this mixture all over the chicken.
- Preheat your oven to 200°C (392°F) and roast the chicken for about 1 hour.
- Once the hour is up, remove the chicken from the oven and allow it to rest for 15 minutes on a cutting board.
