Step-by-Step Instructions
  1. Start by thoroughly rinsing the whole free-range chicken under cold water, then pat it dry with paper towels. Rub the chicken generously with salt, both inside and out.
  2. In a bowl, combine dark soy sauce, Shaoxing wine, and grated ginger juice. Rub this mixture all over the chicken.
  3. Preheat your oven to 200°C (392°F) and roast the chicken for about 1 hour.
  4. Once the hour is up, remove the chicken from the oven and allow it to rest for 15 minutes on a cutting board.
  5. In a bowl, mix the black vinegar, soy sauce, sugar, bird’s eye chillies, finely chopped coriander root, and garlic to create the sauce.
  6. Finally, carve the chicken into pieces and garnish with the fragrant sauce.
