- In a mixing bowl, combine the chicken thighs with soy sauce, oyster sauce, black pepper, and corn starch. Allow to marinate for about 10 minutes.
- Heat a non-stick pan over medium heat, adding oil. Place the marinated chicken thighs in the pan. Cook for 5-7 minutes per side until golden brown.
- Stir in the white parts of the scallions and cook for 2-3 minutes. Add the green parts and stir for 10-20 seconds.
- Plate the scallion chicken, sprinkling black pepper or chopped scallions on top. Serve hot with rice or noodles.
