  • 1 Egg (beaten) flaxseed meal with water for vegan option
  • 1 small Finely Chopped Onion shallots for milder taste
  • 2 cloves Minced Garlic fresh is best, use garlic powder if needed
  • 1 tablespoon Fresh Sage dried sage can be used
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon Red Pepper Flakes (optional) for a mild kick
  • 2 tablespoons Olive Oil for searing meatballs

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground turkey, canned pumpkin puree, breadcrumbs, and grated Parmesan cheese. Add the beaten egg, finely chopped onion, minced garlic, fresh sage, salt, pepper, ground nutmeg, and red pepper flakes. Mix gently until just combined.
  3. Lightly oil your hands and roll the mixture into meatballs about 1 to 1.5 inches in diameter. Arrange on the baking sheet.
  4. Heat a skillet over medium-high heat and add a splash of olive oil. Sear the meatballs for about 3-4 minutes on each side until golden brown.
  5. Transfer the meatballs back to the baking sheet and bake in the oven for 15-20 minutes until they reach an internal temperature of 165°F (74°C).
  6. Remove from the oven and let the meatballs rest for a couple of minutes. Serve warm, garnished with additional sage or Parmesan if desired.
