For the Chicken
  • 2.5 to 3 lbs Bone-in, skin-on chicken You can opt for skinless parts for a lighter meal.
  • 1/4 cup Avocado or olive oil Melted butter can be substituted for a richer taste.
  • Sea salt Essential for seasoning; adjust to elevate the dish to your taste.
  • Ground black pepper Essential for seasoning; adjust to elevate the dish to your taste.
For the Aromatics
  • 3 medium Shallots Thinly sliced; sweet onions can be used if shallots aren’t available.
  • 20 to 25 whole Garlic cloves Key flavor ingredient that caramelizes beautifully.
  • 1 small bunch Fresh thyme Dried thyme can be used as a substitute (1 tsp).
  • 3 to 4 sprigs Fresh rosemary Use dried rosemary if you don’t have fresh.
For the Liquid
  • 1/2 cup Chicken broth Low-sodium broth or vegetable broth is a great alternative.
  • 1/2 cup White wine Such as Chardonnay or Pinot Grigio; substitute with chicken broth and a splash of lemon juice.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (204°C).
  2. Line a large casserole dish with Reynolds Wrap® Heavy Duty Foil.
  3. Spread thinly sliced shallots and half of the whole garlic cloves in the dish. Sprinkle with fresh thyme and rosemary.
  4. Place the seasoned chicken on top, drizzle with oil, and season with salt and pepper.
  5. Scatter remaining garlic cloves and pour in chicken broth and white wine.
  6. Roast uncovered for about 1 hour or until golden brown and reaches 165°F (74°C).
  7. Broil for the last 5 to 7 minutes for crispy skin.
  8. Remove from the oven and let the chicken rest for a few minutes before serving.
