Step-by-Step Instructions
  1. Marinate the chicken with salt, black pepper, paprika, curry powder, thyme, and onion. Let it sit for at least 30 minutes.
  2. Heat oil in a large pot and sear the marinated chicken pieces until golden, about 5-7 minutes per side. Remove and set aside.
  3. Blend the Roma tomatoes, red bell pepper, small red onion, and scotch bonnet peppers until smooth.
  4. Fry tomato paste in the pot for 2 minutes until fragrant.
  5. Add the blended mixture to the pot and simmer for 10 minutes.
  6. Mix in garlic powder, ginger powder, and bouillon. Adjust salt to taste and cook for another 2-3 minutes.
  7. Return the seared chicken to the pot and simmer for 25-30 minutes.
