  • 1 cup Salsa can substitute with canned enchilada sauce
  • 2 cups Cheese mix of cheddar and Monterey Jack, or vegan cheese for dairy-free
  • 2 tablespoons Seasonings taco seasoning or homemade mix with chili powder, cumin, and garlic powder
Optional Toppings
  • 1 cup Sour Cream for serving
  • 1 cup Guacamole pairs well with the casserole
  • Fresh Herbs cilantro or green onions for garnish

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  2. Cook the ground beef in a large skillet over medium heat for 5–7 minutes until browned. Drain excess fat and season with taco seasoning.
  3. Layer tortillas in the baking dish, slightly overlapping to cover the bottom.
  4. Spread half of the ground beef mixture, half of the beans, half of the salsa, and a generous amount of cheese. Repeat layering process and finish with cheese on top.
  5. Cover with aluminum foil and bake for 20 minutes, then remove foil and bake an additional 10 minutes until the cheese is bubbly and golden brown.
  6. Cool for 5–10 minutes, slice into squares, and serve with toppings.
