Ingredients

For the Chicken
  • 3 pounds Chicken (bone-in or boneless) Choose bone-in for more flavor and moisture or boneless for quicker cooking.
For the Seasoning
  • 1 teaspoon Sea Salt Enhances flavor; avoid coarse salt for even distribution.
  • 1 cup Brown Sugar Substitute Adds sweetness without carbs; erythritol or monk fruit work great.
  • 1 teaspoon Garlic Powder Provides aromatic base flavor; fresh garlic can elevate the taste.
  • 1 teaspoon Smoked Paprika Offers a smoky depth; switch to chipotle paprika for added heat.
  • 1 teaspoon Black Pepper Adds subtle heat; freshly ground is recommended for the best flavor.
  • 1/2 teaspoon Cayenne Pepper Introduces heat and bite; adjust to taste preference.
For the Sauce
  • 1 cup Keto Barbecue Sauce Adds moisture and flavor; homemade is best, but store-bought works in a pinch.

Equipment

  • Instant Pot
  • grill
  • Oven
  • Air Fryer

Method

Step-by-Step Instructions
  1. In a small bowl, combine sea salt, brown sugar substitute, garlic powder, smoked paprika, black pepper, and cayenne pepper. Mix well to ensure an even distribution of flavors.
  2. Rub the seasoning generously over your chicken pieces, ensuring all surfaces are covered. Let the seasoned chicken sit for at least 30 minutes.
  3. Decide on your preferred cooking method. If using the Instant Pot, add one cup of water and place the chicken on the trivet. Set it to high pressure, cooking boneless chicken for 7 minutes and bone-in for 15 minutes.
  4. For baking, preheat your oven to 420°F. Place chicken on a lined baking sheet and cook bone-in pieces for 15 minutes before flipping and basting with BBQ sauce.
  5. If using an air fryer, preheat it to 400°F. Arrange the seasoned chicken in the basket, cooking bone-in pieces for about 16 minutes.
  6. Once cooked through, remove the chicken from heat and allow it to rest for a few minutes before serving.

Consider seasoning the chicken in advance for maximum flavor infusion. Don't rinse the chicken before cooking; just pat it dry with a paper towel.
