Marinade and Preparation
- In a blender, combine soy sauce, mirin, fresh ginger, garlic, sesame oil, rice vinegar, apple, sweetener, and pepper. Blend until smooth. Set aside.
- Cut slits in the chicken legs and place in a zip-top bag. Pour marinade over them, seal the bag, and refrigerate for 1-2 hours or overnight.
- Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
- Remove chicken from marinade, arrange in the air fryer basket, and air fry for 25-30 minutes, flipping halfway.
- Let the chicken rest for a few minutes before garnishing with sesame seeds and green onions. Serve with jasmine rice or kimchi.
