Ingredients
  

For the Marinade
  • 1/2 cup Soy Sauce Substitute with tamari for gluten-free
  • 1/4 cup Mirin Can replace with rice vinegar or rice wine
  • 1 tablespoon Fresh Ginger Best when fresh
  • 3 cloves Garlic Adjust according to preference
  • 2 tablespoons Sesame Oil Can substitute with olive oil
  • 1 tablespoon Rice Vinegar White vinegar can be a substitute
  • 1 medium Apple Any sweet apple variety works
  • 2 tablespoons Sweetener Options include honey or maple syrup
  • 1/2 teaspoon Pepper Adjust according to spice tolerance
For the Chicken
  • 4 legs Chicken Legs (Quarters, Thighs, Drumsticks) Any cut works well
For the Garnish
  • 2 tablespoons Green Onion Chives can be used as an alternative
  • 1 tablespoon Sesame Seeds Optional garnish for texture

Method
 

Marinade and Preparation
  1. In a blender, combine soy sauce, mirin, fresh ginger, garlic, sesame oil, rice vinegar, apple, sweetener, and pepper. Blend until smooth. Set aside.
  2. Cut slits in the chicken legs and place in a zip-top bag. Pour marinade over them, seal the bag, and refrigerate for 1-2 hours or overnight.
  3. Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  4. Remove chicken from marinade, arrange in the air fryer basket, and air fry for 25-30 minutes, flipping halfway.
  5. Let the chicken rest for a few minutes before garnishing with sesame seeds and green onions. Serve with jasmine rice or kimchi.
