For the Chicken
  • 1 pound Chicken (thigh or breast) Thighs are juicier
  • 6 pieces Wooden Skewers Soak in water to prevent burning

Method
 

Step-by-Step Instructions
  1. Soak the skewers in water for 10-20 minutes while preparing the other ingredients.
  2. Whisk together soy sauce, water, red wine or mirin, brown sugar, and vinegar in a medium bowl.
  3. In a separate bowl, mix garlic, ginger, and ground pepper. Add 1/4 cup of marinade and toss in chicken.
  4. Transfer the remaining marinade to a saucepan and bring to a boil. Mix cornstarch with a little marinade to create a slurry.
  5. Thread marinated chicken onto soaked skewers, grill for 8-12 minutes, basting with thickened sauce occasionally.
