  1. Begin by cutting the boneless, skinless chicken breast into bite-sized cubes. In a large bowl, toss the cubes with cornstarch, kosher salt, and pepper until they're evenly coated. Set the seasoned chicken aside while you prepare your cooking pan.
  2. Place a large skillet over medium-high heat and add 2 tablespoons of olive oil alongside 1 tablespoon of unsalted butter. Allow the mixture to heat until it shimmers, about 2 minutes.
  3. Carefully add the chicken cubes in a single layer, ensuring not to overcrowd the pan. Cook for 6–8 minutes, flipping occasionally, until the chicken is golden brown and cooked through.
  4. Reduce the heat to medium and add 3 tablespoons of finely minced garlic to the pan. Sauté for about 30 seconds, stirring constantly, until the garlic becomes fragrant and lightly golden.
