Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet. Roast for about 40-45 minutes, stirring halfway through.
  3. In a skillet, heat remaining olive oil over medium heat. Add diced yellow onion and sauté for about 5-7 minutes until translucent.
  4. Add lean ground beef to the skillet with the onions. Sprinkle in taco seasoning, breaking apart the beef. Cook for about 8-10 minutes until browned and cooked through.
  5. Assemble the bowls by layering roasted sweet potatoes at the bottom, followed by seasoned ground beef.
  6. Top the bowl with sliced avocado and cottage cheese.
  7. Drizzle 2 tablespoons of hot honey over each bowl before serving.
